Brining essentials
2 quarts water
2 tablespoons kosher salt
1/4 cup brown sugar
2 garlic cloves, crushed
4 sprigs fresh thyme
6 chicken legs and thighs ( bone in)
Barbecue sauce
1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1/2 onion, chopped
2 garlic cloves,chopped
2 cups ketchup
1/4 cup brown sugar
1/4 cup molasses
2 tablespoons red or white wine vinegar
1 tablespoon dry mustard
1 teaspoon ground cumin
1 teaspoon paprika
Freshly ground black pepper
Brining:
Mix in a bowl water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Place the chicken in the bag and refrigerate for at least 30 minutes to lock all the flavors from the seasonings.
Sauce
Create a bunch of thyme and wrap the bacon around it neatly with a kitchen twine. Heat 2 tablespoon of oil in a saucepan over medium heat. Add thyme to bring out the smoky taste of the bacon. Add onion and garlic, cook for 5 minutes. Put in the rest of the ingredients and tkeep the heat low. Cook for 20 minutes on low heat. Put aside the remaining sauce. Preheat oven 375 degrees F.
Grilling and Baking
Preheat the barbecue grill. Dab some oil on the grill so the chicken would not stick. Drain the chicken from brine and pat dry the chicken with paper towels. Cook each side of the chicken for 10 minutes or until meat is white. After the chicken is cooked, transfer to oven. Brush the chicken with sauce of chicken barbecue recipe. Bake the chicken.
